Today, Fabio, Valerio and Angelo D’Antoni run an excellent traditional confectionery, based on the values of meticulous craftsmanship on which its founders built their reputation and identity. The laboratory is now managed by Andrea D’Antoni, a young and skilled pastry chef (born in 1993), and a third generation member of the family, who joined the team after 10 years of experience around the world. He is a specialized chocolatier who has recently created an exclusive line of chocolate in partnership with chocolate manufacturer Barry Callebaut - a series of products spanning from chocolate tablets to artistic Easter eggs. His greatest passions are the ‘Panettone’ and the ‘Colomba’. The making of these two products requires a great deal of effort since achieving the highest quality always presents a constant challenge in finding the best flour, yeast and levitation time.
